SCAE Coffee Diploma System

The Speciality Coffee Association of Europe (SCAE) sits at the very heart of the coffee community, where thousands of coffee professionals and enthusiasts can share their wealth of knowledge and experience with one another.

The SCAE Coffee Diploma System is a certified system that aims to inspire coffee excellence through education, research and most importantly, communication. This is the SCAE’s vision to take speciality coffee out to the world, to educate consumers on this most fascinating beverage for the benefit of every level in the supply chain, whilst helping to ensure the long-term sustainability of the coffee industry.

The SCAE Coffee Diploma System has three levels of certifications (Foundation, Intermediate and Professional) in six subject models. Each time a subject module is completed and certification is passed successfully, credits are accumulated. In order to obtain the full Coffee Diploma, 100 points are needed.

The Australian Coffee Academy’s Head Trainer and Director, Brian Raslan, is qualified to teach three of the six modules of the diploma at foundation level, right here in Adelaide! The three modules on offer are Introduction to Coffee, Barista Skills Foundation and Brewing Foundation, all including an assessment component which consists of a practical and written exam. Students must obtain at least 60% in this formal assessment to pass the module.

These modules of the SCAE Coffee Diploma System are offered as a three day course at the Australian Coffee Academy. Please see below for further descriptions of each day, as well as available upcoming dates.

Day 1: Introduction to Coffee (with assessment)

Introduction to Coffee is an ideal module for anyone who is new to the coffee industry or just has an interest in this wonderful drink. It charts coffee’s journey from its origins in Ethiopia to the major commodity it is today, enjoyed by millions of people around the world. From farming the cherries through drying, roasting, brewing and finally drinking, this module looks at the processes coffee goes through. This half day course also includes a “coffee cupping” which allows you to taste the various flavours coffee has to offer.

Introduction to Coffee is a 5 hour class from 9:00am – 2:00pm.

 

Day 2: Barista Skills Foundation (with assessment)

Barista Skills is for people focussing on the key skills required to set your grinder, make espresso and foam and texture milk for cappuccinos. This module allows you to gain a deeper understanding of the coffee itself and build on your practical skills for milk technique and latte art, not to mention health and safety, customer service and basic business.

Barista Skills Foundation is a full day class from 9:00am – 4:00pm.

 

Day 3: Brewing Foundation (with assessment)

The study of Brewing introduces you to the different ways of brewing coffee, from Chemex and siphon to clever dripper and French press. In addition, this module allows you to get hands-on and learn to analyse your grind profile, match your grind to your brewing method and to scientifically measure coffee strength and chart a coffee’s extraction.

Brewing Foundation is a full day class from 9:00am – 4:00pm.
